It’s St. Patrick’s Day! Truth be told, we’ve never actually been to the end of the rainbow to find the pot of gold, or whatever it is that’s down there (Skittles?). Though it’s time to celebrate St. Patrick’s Day once again, and we’d love to check that rainbow out, we’ve got a lot going on with helping our Youfit Tribe with some green goodness of our own.
Recipes, that is.
If you’re looking for a good excuse to ditch the green beer and stick with green vegetables, for instance, we’ve got a couple of quick ideas that’ll fill up your blender – and your belly – without any guilt. Try these on for size!
Green Detox: A little bit of zing, a little bit of sweet. A lot of bit of goodness!
2 cups packed baby spinach leaves
Handful parsley leaves and stems
1 medium green apple, rinsed with core removed
1 large seedless (hothouse or English) cucumber, rinsed
1-inch length piece fresh ginger, scrubbed clean
1 medium lemon
Chop the apple, cucumber and ginger, then cut away the yellow peel of the lemon (plus, pluck any seeds). Then let the juicer do the work! Makes two servings, so have one now – and stash the other for breakfast.
Lean Green: Need something a little sweeter to balance out the veggies? Perfect. This smoothie packs pineapple, pear and agave nectar too.
1/2 of a pineapple, peeled, cored and chopped
1 cucumber, peeled and chopped
1 ripe pear, peeled, cored and chopped
juice from 1 lime
1 cup baby spinach leaves
10 mint leaves, chopped
1 tsp agave nectar
1 tsp of chia seeds
Puree the ingredients until they’re smooth, and that’s it! Makes two servings.
